My Sourdough Story
My journey with sourdough began as a necessity due to Crohn's Disease. Diagnosed in 2006, I began looking for way I could incorporate the foods I loved back into my diet. The long fermentation time of sourdough (known as bulk ferment) helps break down proteins in the flour, making it easier to digest for those with sensitivities or digestive issues, such as IBS, Crohn's Disease or Ulcerative Colitis. After struggling for years with a less than effective homemade starter, I discovered the remarkable difference our family heirloom starter makes. Its age and quality result in unmatched oven spring, taste, and crumb texture.
