Sourdough Discard Waffles

Crispy and fluffy sourdough discard waffles made with Summit Sourdough starter. Perfect for breakfast or brunch, these waffles utilize sourdough discard for a unique, tangy flavor.
Sourdough waffles are a delicious and unique twist on the classic breakfast staple. Made with a sourdough starter instead of traditional waffle batter, these waffles have a beautiful flavor that pairs perfectly with sweet syrups and toppings.  Sourdough waffles are a great way to use up extra starter and add some variety to your breakfast routine. They are delicious topped with butter, syrup, fruit, or whipped cream. You can also add some additional flavors to the batter such as cinnamon, vanilla, or chocolate chips for an extra special treat.

NOTES:  Prepare your sponge (the first 3 ingredients of this recipe) at least 4 hours in advance of cooking your batter.  I typically will prepare at bedtime and finish mixing in remainder of the ingredients in the morning.

INGREDIENTS:

  • 1 cup sourdough starter, active or discard is fine
  • 2 cups flour (I use strong flour)
  • 1 1/2 cup water
  • 2 tablespoon honey (sub sugar)
  • 1 teaspoon salt
  • 2 eggs
  • 1/2 cup melted butter or oil
  • 1 tablespoon of water
  • 1 teaspoon of baking soda
  • 2 teaspoon Vanilla (optional)
DIRECTIONS:
  1. In a large mixing bowl, combine the sourdough starter, flour and water.  Cover with plastic wrap and allow to sit a minimum of 4 hours - overnight.  This will create a light, airy and bubbly sponge.  
  2. The next day (or 4 hours later) add the sugar, salt, eggs and butter to the batter.  Mix well and combine.   
  3. In a separate small bowl, whisk together the 1 tablespoon of water with 1 teaspoon of baking soda.  Fold the baking soda mixture into the batter and allow a few moments for the batter to become airy.   
  4. Heat your waffle iron.  Once hot, scoop the batter onto the waffle iron and cook according to your waffle iron's instructions.
  5. Serve hot with your desired toppings.
Note: You can adjust the recipe according to your preference, you can add vanilla extract, cinnamon, or other flavors to the batter.

    THE BEST! Our family will not eat any other waffles ever again! Everyone loves them and they are super simple to make. Leftovers freeze so well, are just as tasty and make a quick breakfast for on the go mornings. And the house smells amazing all day!
